Ingredients You’ll Need:

For the Stir-Fry:

  • 1 head organic broccoli
  • 1 organic sweet red pepper
  • 1 large onion
  • 2 medium carrots
  • 2 organic celery stalks
  • 1/2 large green cabbage
  • 8 medium organic cremini mushrooms
  • 3 cups brown basmati rice
  • Sesame oil for cooking

For the Sauce:

  • 2 tsp Worcester sauce (look for a vegan and organic option)
  • 1/4 cup white wine
  • 1/3 cup coconut aminos
  • 2 tsp toasted or regular sesame oil
  • 2 Tbsp water
  • 2 Tbsp organic gluten-free soy sauce/tamari sauce (or more coconut aminos for soy-free)
  • 1 tsp organic cornstarch
  • Pinch of black pepper

Step-by-Step Instructions:

1. Cook the Rice:

  • Rinse the rice under cold water until the water runs clear.
  • Combine the rice and water in a pot (use a 3:1 ratio of water to rice).
  • Bring to a boil, then reduce heat and simmer, covered, for 20-25 minutes, or until the rice is tender and the water is absorbed.

2. Prepare the Vegetables:

  • While the rice cooks, wash and chop all the vegetables. Slice the onion, carrots, and celery. Cut the cabbage into thin slices, and the broccoli into bite-sized florets. Slice the mushrooms and sweet pepper.

3. Stir-Fry Time:

  • Heat 1-2 Tbsp sesame oil in a large pan or wok over medium heat.
  • Add the onions and cook for a few minutes, until softened.
  • Add the carrots and celery, cooking for another few minutes.
  • Stir in the cabbage, mushrooms, sweet pepper, and broccoli. Cover and cook for 4-5 minutes, stirring occasionally.

4. Make the Sauce:

  • In a small bowl, whisk together the Worcester sauce, white wine, coconut aminos, sesame oil, water, soy sauce (or extra coconut aminos), cornstarch, and black pepper.

5. Combine and Simmer:

  • Pour the sauce over the vegetables, stir well, and cook for 2-3 minutes until the sauce thickens slightly.

6. Serve and Enjoy:

  • Spoon the cooked rice into bowls and top with the delicious stir-fry.
