Gem City Fine Foods’ Blueberry Lemon Loaves: A Delicious and Convenient Breakfast Treat

While not technically a muffin, I have to give a special shout-out to Gem City Fine Foods’ Gluten-Free Blueberry Lemon Loaves. These delightful loaves are baked in a dedicated gluten-and nut-free facility, ensuring that they’re safe for those with dietary restrictions. (Please note: they do contain dairy and eggs.)

These loaves are so incredibly delicious, they even won the Specialty Food Association’s Bakery Desserts New Product award in 2020. Sadly, this company is no longer in business.

Gluten-Free Muffin Breakfast Parfait Recipe:

Since I can’t tolerate oats, I decided to transform one of the Blueberry Lemon Loaves into a breakfast parfait. It’s a simple yet satisfying way to enjoy this delicious treat. Here’s how I make it:

Ingredients:

  • 1 Gem City Fine Foods Gluten-Free Blueberry Lemon Loaf
  • Yogurt of your choice (I prefer vanilla or lemon)
  • Fresh blueberries (optional)

Instructions:

  1. Break one loaf into three sections.

  2. Crumble one-third of the loaf into the bottom of a small mason jar.

  3. Add a few spoonfuls of yogurt on top of the crumbled loaf.

  4. Repeat layers with another third of the crumbled loaf and more yogurt.

  5. For the final layer, top with remaining crumbled blueberry loaf and a few fresh blueberries for added flavor and texture.

Tips:
