The kit promised simplicity: pie pumpkins, spice blend, instructions. What could go wrong? Famous last words, right? I prepped my pie pumpkins, popped them in the oven, and let them work their magic. A word to the wise: underestimating pumpkin cooling time is a real thing! Plan ahead, my friends.

As I patiently (or impatiently) waited for those pumpkins to cool, I remembered a delightful discovery from a recent road trip – the Julian Pie Company in Santa Ysabel, California. This place is a pie lover’s dream! If you’re ever in the area, do yourself a favor and grab a slice (or two!).

Pumpkin Pie from Scratch: A Learning Curve (and a Food Processor Fiasco!)

Once my pie pumpkins were cool enough to handle, I got to work on the puree. This part was surprisingly satisfying! I opted for a potato masher instead of a food processor, yielding perfectly textured, homemade pumpkin puree.

Then came the pie filling. Now, remember that “what could go wrong?” question? The instructions called for a food processor, and against my better judgment (and usual chopping habits), I gave it a whirl. Let’s just say pumpkin puree has a mind of its own when exceeding the food processor’s fill line. Chaos, my friends, utter chaos!

From Near-Disaster to Delicious Pie

A little improvisation and a pie shield saved the day! Not picture-perfect, but oh-so-tasty!

After a near-disaster involving pumpkin splatters and a frantic ingredient rescue mission, I opted for my trusty blender. It worked like a charm! I carefully filled my pie shell (and discovered I had enough puree for a second pie – bonus!).

Another lesson learned: always read the “special hints.” I totally missed the part about brushing the crust with milk to prevent burning. Thankfully, some handy pie shields saved the day (another must-have for bakers!).

Despite the misadventures, my pumpkin pie from scratch emerged from the oven, a tad darker than intended but smelling heavenly. The taste? Absolutely divine! Was it worth the effort? I’ll let you be the judge.
