What is Water Kefir?

Imagine a bubbly, subtly sweet, fruit-infused drink that’s bursting with gut-healthy probiotics – that’s Water Kefir! It’s similar to Kombucha in its effervescence and slight fermentation, but instead of tea, we use water kefir grains. These fascinating, gelatinous “grains” are actually a symbiotic culture of bacteria and yeast that are believed to have originated from the prickly pear cactus in Mexico.

Don’t confuse this with Milk Kefir – Water Kefir is completely dairy-free and gluten-free, making it a fantastic option for those with dietary restrictions. What’s even more intriguing is that the kefir grains feed on sugar, essentially “eating” it during the fermentation process! Let’s get brewing:

  1. First Fermentation:

    • In two mason jars, dissolve 1/4 cup of sugar in 4 cups of water.
    • Add 1/4 cup of water kefir grains, a lemon wedge, and a prune (optional) to each jar.
    • Cover loosely with a kitchen towel and let it sit at room temperature for 2-4 days.
  2. Second Fermentation:

    • After the initial fermentation, strain the kefir water into a clean jar containing 1-1.5 cups of your chosen fruit.
    • Seal the jar tightly and let it sit at room temperature for another 24 hours, “burping” the lid every 6-12 hours to release pressure.
