What is Water Kefir?

Imagine a bubbly, subtly sweet, fruit-infused drink that’s bursting with gut-healthy probiotics – that’s Water Kefir! It’s similar to Kombucha in its effervescence and slight fermentation, but instead of tea, we use water kefir grains. These fascinating, gelatinous “grains” are actually a symbiotic culture of bacteria and yeast that are believed to have originated from the prickly pear cactus in Mexico.

Don’t confuse this with Milk Kefir – Water Kefir is completely dairy-free and gluten-free, making it a fantastic option for those with dietary restrictions. What’s even more intriguing is that the kefir grains feed on sugar, essentially “eating” it during the fermentation process! This leaves the final drink with a very low sugar content, making it a guilt-free way to satisfy your taste buds while nourishing your body.

The Magic of Making Water Kefir

What you’ll need:

  • Water Kefir Grains: The heart of the operation! You can find these in the refrigerated section of health food stores or online.
  • Sugar: Opt for organic cane sugar, coconut sugar, or a mineral-rich blend (we’ll share a recipe below!).
  • Fruit: Fresh, ripe fruits and berries work best – think juicy peaches, vibrant berries, or even tart cranberries! Frozen fruits or juices are also viable alternatives.
  • Water: Good old tap or well water works wonders!
  • Lemon Slices: These help prevent the growth of Kahm yeast, which can alter the taste.
  • Unsulfered Prunes (optional): A little something extra to give fermentation a boost.
  • 2-quart mason jars (2-3): The fermentation vessels for our magical potion!
  • A strainer, a kitchen towel, and you’re good to go!

Let’s get brewing:

  1. First Fermentation:

    • In two mason jars, dissolve 1/4 cup of sugar in 4 cups of water.
    • Add 1/4 cup of water kefir grains, a lemon wedge, and a prune (optional) to each jar.
    • Cover loosely with a kitchen towel and let it sit at room temperature for 2-4 days.
  2. Second Fermentation:

    • After the initial fermentation, strain the kefir water into a clean jar containing 1-1.5 cups of your chosen fruit.
    • Seal the jar tightly and let it sit at room temperature for another 24 hours, “burping” the lid every 6-12 hours to release pressure.
  3. Refrigerate and Enjoy!
