What Can I Use to Flavor My Kombucha?

The short answer? Pretty much anything that tickles your fancy! The beauty of home brewing lies in its flexibility. Experiment with your favorite fruits, herbs, and spices to create your signature blends.

When is the Best Time to Flavor Kombucha?

While some adventurous souls experiment with flavoring during the first fermentation (F1), I recommend sticking to flavoring during the second fermentation (F2) for optimal results. Why? Introducing flavorings during F1 can stress your SCOBY, potentially impacting the health of your kombucha. F2, on the other hand, provides a safe and controlled environment for flavor infusion without jeopardizing your precious SCOBY.

How Much Flavoring Should I Use?

Again, it all boils down to personal preference. I find that ¼ to ⅓ cup of fresh fruit puree or juice per 16 oz bottle strikes a nice balance, but feel free to adjust based on your desired intensity. Remember, a little goes a long way, especially with concentrated flavors like juices or extracts.

Using fruit pieces results in a subtler flavor profile, allowing the tea’s nuances to shine through. However, this method might lead to less carbonation as the yeast has a harder time accessing the sugar. Consider adding a teaspoon of sugar to your bottle for an extra boost.

Herbs and Spices:

Fresh or high-quality dried herbs and spices add a layer of complexity to your kombucha. Mint, ginger, lavender, and basil are just a few examples that can elevate your brew to new heights. Use sparingly, as the flavors tend to intensify during F2.

Other Flavoring Adventures:
