Making your own pasta might sound daunting, but trust me, it’s much simpler than you think. With just a handful of ingredients and a sprinkle of patience, you’ll be whipping up delicious, fresh pasta that will impress even the pickiest eaters.

This recipe is inspired by my time in Italy, where the art of pasta-making is deeply ingrained in the culture. I was fortunate enough to learn from true masters, and now I’m thrilled to share my adapted version with you.

Gather Your Artistic Tools (Ingredients)

  • 6 cups of flour, separated into two piles (I recommend a good quality Italian flour or a 1:1 gluten-free alternative)
  • 2 tsp of spirulina powder (the secret to vibrant green pasta!)
  • 6 eggs (3 per pile of flour)
  • 4 tbs of olive oil (2 per pile of flour)
  • 2 pinches of salt (1 per pile of flour)

  1. Create Your Canvas: On a clean, dry, flat surface, create two mounds of flour. This recipe yields a generous amount of pasta, perfect for sharing. If you’re cooking for a smaller group, feel free to halve the recipe.

  2. Infuse the Color: Sprinkle the spirulina powder over each mound of flour and gently mix it in. Don’t worry if the color seems subtle at this stage, it will intensify as the dough comes together.

  3. Form the Wells: Using your fingers, create a well in the center of each flour mound. The well should be large enough to comfortably hold three eggs.

  4. The Heart of the Dough: Crack three eggs into each well. Add two tablespoons of olive oil and a pinch of salt to each well. Now, for the fun part โ€“ gently scramble the eggs with a fork, being careful not to let the mixture overflow the flour walls.

  5. Incorporate the Flour: Gradually incorporate the flour from the edges of the well into the egg mixture. Start slowly, then increase the pace as the mixture thickens.

  6. Knead to Perfection: As the dough comes together, start kneading it with your hands. Add a sprinkle of flour to your work surface as needed to prevent sticking. Knead and fold the dough for about five minutes, then cut it in half to check for air bubbles. If you see bubbles, continue kneading for another five minutes. Repeat this process until the dough is smooth and free of air bubbles.

  7. Rest and Repeat: Form the dough into a ball and cover it with a bowl. Let it rest for 20 minutes. Repeat steps 4-7 with the second pile of flour and the remaining ingredients.

  8. Roll It Out: Lightly flour your work surface and rolling pin. Roll out one portion of the dough, alternating directions to ensure even thickness. Aim for a rectangular shape, but donโ€™t fret about achieving perfect symmetry.

  9. Thin and Elegant: Continue rolling until the dough is about 1/4 inch thick. This takes practice, but don’t be afraid to get hands-on!

  10. Folds of Flavor: Fold the top and bottom edges of the dough inward by about two inches, then fold it over itself again.

  11. Cut and Separate: Now, cut the folded dough into thin strips. Use your knife to lift and gently shake the pasta strips to separate them. As you cut, place the finished strands in a well-floured container to prevent sticking.

  12. Ready to Cook: Bring a large pot of salted water to a boil. Add the pasta and cook for 3-5 minutes, or until it reaches your desired level of doneness.
